Ingredients

Main Ingredients
  • 1 pound fresh green beans, trimmed Feel free to substitute with frozen green beans if that's what you have on hand
  • 4 tablespoons unsalted butter Use vegan butter or olive oil for a vegan version
  • 3 cloves garlic, minced Garlic powder can be used in a pinch
  • Salt and pepper, to taste
  • A squeeze of fresh lemon juice (optional) Adds a bright finish
  • Slivered almonds or toasted pine nuts for garnish (optional) Adds extra crunch

Method

Preparation
  1. Bring a large pot of salted water to a boil.
  2. Blanch the green beans for about 3-4 minutes, just until they turn vibrant green and slightly tender.
  3. Plunge the green beans into an ice bath to stop the cooking.
Cooking
  1. In a large skillet over medium heat, melt the butter, watching it transform from pale yellow to rich caramel, about 5-7 minutes.
  2. Once nutty with little brown specks forming, add the minced garlic and stir for about a minute, until fragrant but not burnt.
  3. Add in the blanched green beans, tossing to coat in the brown butter.
  4. Season with salt, pepper, and a splash of lemon juice if desired.
  5. Cook the beans for an additional 2-3 minutes, allowing them to soak up the flavors.
  6. Before serving, sprinkle with slivered almonds or toasted pine nuts for added crunch if desired.
