  • 1 lbs ground beef (or turkey for a leaner option)
  • 1 medium head of cauliflower, riced You can buy it pre-riced to save time.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
  • 2 tablespoons olive oil (or butter)
  • to taste Fresh parsley, finely chopped (for garnish)

Method
 

Cooking
  1. Heat up a large skillet over medium heat and drizzle in the olive oil.
  2. Once hot, add the diced onion and bell pepper. Sauté until translucent, about 4-5 minutes.
  3. Add the minced garlic and cook until fragrant, about 30 seconds, avoiding browning.
  4. Incorporate the ground beef, breaking it apart with a spatula as it cooks for 5-7 minutes until brown with no pink remaining.
  5. Season the meat with smoked paprika, cumin, salt, and pepper, and stir to combine.
  6. Add the riced cauliflower to the skillet and mix well. Reduce heat to low and cover, cooking for about 8-10 minutes, stirring halfway through.
  7. Once cauliflower is tender, adjust seasoning if needed, serve hot garnished with fresh parsley.
