Ingredients
  

For the Chicken Marinade
  • 1.5 pounds Chicken breast or thighs, cut into 1-inch cubes Thighs are juicier, but breasts work just fine.
  • 1 cup Yogurt Use Greek yogurt for extra creaminess.
  • 2 tablespoons Lemon juice Lime juice is a lovely alternative.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika Smoked paprika can add a nice depth.
  • 1 teaspoon Cumin
  • Salt and pepper To taste
For the Skewers
  • Vegetables for skewering (bell peppers, red onions, zucchini) Feel free to mix in your favorites or whatever is seasonal!
  • Skewers (metal or soaked wooden skewers)

Method
 

Preparation
  1. In a large bowl, combine yogurt, lemon juice, garlic powder, paprika, cumin, salt, and pepper to create the marinade.
  2. Toss the chicken in the marinade until each piece is generously coated and cover the bowl with plastic wrap.
  3. Marinate in the fridge for at least 30 minutes for best results, or a minimum of 15 minutes if in a hurry.
  4. Chop the vegetables into similar-sized pieces as the chicken for even cooking.
Grilling
  1. Preheat the grill (or grill pan) to medium-high heat.
  2. Thread the marinated chicken and vegetables onto the skewers, alternating for a colorful arrangement.
  3. Grill the skewers for about 5 to 7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Let the kebabs rest for a few minutes before serving to allow the juices to redistribute.

Notes
