Ingredients

Main Ingredients
  • 1 cup lion’s mane mushrooms, finely chopped
  • ½ cup breadcrumbs (gluten-free if desired)
  • ½ cup green onions, finely sliced
  • 2 tablespoons vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Oil for frying (olive or coconut oil works well)

Method

Preparation
  1. Begin by preparing the lion's mane mushrooms; sauté them in a skillet over medium heat with a touch of oil until they're softened and golden brown.
  2. In a bowl, combine the sautéed mushrooms with breadcrumbs, green onions, vegan mayo, Dijon mustard, garlic powder, paprika, lemon juice, salt, and pepper. Stir gently until well mixed.
  3. Form the mixture into patties, about the size of your palm.
  4. Heat oil in a skillet over medium heat and fry each patty for about 4-5 minutes on each side, until they are golden and crispy.
Serving Suggestions
  1. Serve the crab cakes as appetizers with a zesty dipping sauce or as the main dish alongside roasted vegetables or a quinoa salad.

Customize crab cakes with your favorite herbs like dill or cilantro. For gluten-free, replace breadcrumbs with ground oats or almond flour. Experiment with different dipping sauces such as spicy aioli or classic tartar sauce.
