Ingredients
  

For the Meatballs
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs Use gluten-free if needed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (or 1 tablespoon dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
For the Sauce and Topping
  • 24 oz marinara sauce
  • 1 cup shredded mozzarella cheese
  • for garnish Fresh basil or parsley Optional

Method
 

Preparation
  1. Mix the ground chicken, breadcrumbs, Parmesan, basil, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Roll the chicken mixture into small balls, about the size of golf balls, ensuring they are compact.
  3. Place the meatballs in the bottom of the slow cooker.
  4. Pour the marinara sauce over the meatballs, ensuring they are well coated.
Cooking
  1. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours until cooked through.
  2. Sprinkle mozzarella cheese over the meatballs 15 minutes before serving and cover to melt.

Notes
