Ingredients
  

Main Ingredients
  • 8 oz noodles (lo mein, udon, or your preferred type)
  • 2 tablespoons soy sauce (adjust to taste; low sodium works well)
  • 1 tablespoon sesame oil (for extra flavor)
  • 1 tablespoon vegetable oil (to prevent sticking)
Vegetables
  • 1 cup mixed vegetables (like bell peppers, carrots, and snap peas)
  • 2 green onions, chopped (you can reserve some for garnish)
  • 1 teaspoon garlic, minced (optional) Adds a nice kick
  • a sprinkle of sesame seeds (for garnish)

Method
 

Cooking Noodles
  1. Boil a pot of water and cook your noodles according to the package instructions, usually about 4-6 minutes until they're just tender. Drain and rinse under cold water to stop cooking.
Sautéing Vegetables
  1. Heat vegetable oil in a large skillet over medium-high heat. Add mixed vegetables and sauté for 2-3 minutes until bright in color and slightly tender.
  2. If using minced garlic, stir it in and let it cook for about 30 seconds until fragrant.
Combining Ingredients
  1. Add the cooked noodles to the pan, drizzle soy sauce and sesame oil over the top, and toss everything together. Stir gently for 2-3 minutes until everything is well coated.
  2. Remove from heat and sprinkle chopped green onions and sesame seeds on top. Toss to combine.

Notes
