  • 1 pound shredded chicken can use rotisserie for convenience
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 large apple, peeled and diced Granny Smith for tartness or Honeycrisp for sweetness
  • 1 can white beans, drained and rinsed
  • 4 cups chicken broth low sodium
  • 1 cup milk or almond milk for a dairy-free option
  • 1 cup shredded white cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste salt
  • Pepper to taste pepper
  • Olive oil for sautéing olive oil
Optional Toppings

  • as needed tortilla chips

Method
 

Preparation
  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until it’s translucent and fragrant—about 5 minutes.
  3. Add the minced garlic and carrots, cooking for another couple of minutes until the carrots start to soften.
  4. Stir in the diced apple and shredded chicken. Mix everything well and continue to cook for an additional 5 minutes.
Cooking
  1. Pour in the chicken broth and add the rinsed white beans, cumin, and chili powder. Bring the mixture to a gentle boil.
  2. Reduce the heat to a simmer and let it bubble for about 20 minutes.
  3. Lower the heat and stir in the milk and shredded white cheddar cheese until fully combined, seasoning with salt and pepper to taste.
Serving
  1. Serve hot in bowls, garnished with cheese, chopped green onions, or tortilla chips.
  2. Pair with warm bread or cornbread.

Notes
