Preparation
- Heat a splash of olive oil in a large pot over medium heat.
- Add the diced onion and sauté until it’s translucent and fragrant—about 5 minutes.
- Add the minced garlic and carrots, cooking for another couple of minutes until the carrots start to soften.
- Stir in the diced apple and shredded chicken. Mix everything well and continue to cook for an additional 5 minutes.
Cooking
- Pour in the chicken broth and add the rinsed white beans, cumin, and chili powder. Bring the mixture to a gentle boil.
- Reduce the heat to a simmer and let it bubble for about 20 minutes.
- Lower the heat and stir in the milk and shredded white cheddar cheese until fully combined, seasoning with salt and pepper to taste.
Serving
- Serve hot in bowls, garnished with cheese, chopped green onions, or tortilla chips.
- Pair with warm bread or cornbread.
