Ingredients
  

Pasta and Sauces
  • 9 pieces lasagna noodles Use no-boil noodles for convenience.
  • 3 cups marinara sauce Homemade or store-bought.
Seafood Mixture
  • 2 cups cooked shrimp Peeled and deveined; can substitute with scallops if desired.
  • 1 cup cooked crab meat Imitation crab works too.
Cheeses
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese Substitute with vegan cheese if necessary.
  • 1 cup grated Parmesan cheese
Seasonings and Garnish
  • 3 tablespoons fresh parsley Chopped, for garnish.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente. If using no-boil noodles, skip this step.
  3. In a large bowl, combine cooked shrimp, crab, ricotta cheese, garlic powder, Italian seasoning, and a sprinkle of salt and pepper. Mix gently until well combined.
Assembly
  1. Layer marinara sauce at the bottom of a 9×13 inch baking dish to prevent sticking.
  2. Place three noodles side by side, then add half of the seafood mixture over the noodles.
  3. Sprinkle a layer of mozzarella cheese on top.
  4. Repeat the process with another layer of noodles, half of the remaining marinara sauce, and the other half of the seafood mixture.
  5. Finish with one last layer of noodles, followed by the remainder of the marinara sauce, and a generous topping of mozzarella and Parmesan cheese.
  6. Cover the dish with foil (shiny side down) and bake for 25 minutes.
  7. Remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbling.
Final Steps
  1. Once out of the oven, let the lasagna rest for about 10 minutes before slicing.
  2. Garnish with reserved parsley before serving.

Notes
