Ingredients
  

For the Shrimp
  • 1 pound raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
For the Nachos
  • 1 bag tortilla chips (about 10-12 ounces)
  • 2 cups shredded cheddar cheese (or a mix of cheeses)
  • 1 cup black beans, drained and rinsed (optional) For extra protein
  • 1/2 cup diced tomatoes, fresh or canned
  • 1 jalapeño sliced (optional) For heat
  • 1/4 cup chopped fresh cilantro
For Serving
  • Sour cream or Greek yogurt
  • Guacamole
  • Salsa

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the raw shrimp with olive oil, chili powder, paprika, garlic powder, salt, and pepper, coating the shrimp evenly.
Assembly
  1. Spread the tortilla chips in an even layer on a large baking sheet.
  2. Sprinkle the seasoned shrimp, shredded cheese, and black beans (if using) evenly over the tortilla chips.
Cooking
  1. Slide the baking sheet into the oven and bake for about 10-12 minutes, until the shrimp are cooked through and the cheese is bubbly.
  2. Remove from the oven and immediately top with diced tomatoes, jalapeño slices, and cilantro.
