Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the vanilla extract and mix until well combined.
  4. Gradually sift in the flour and salt, folding gently with a spatula to form a soft, slightly crumbly dough.
  5. If the dough is too dry, sprinkle in a teaspoon of cold water until it holds together.
  6. Pat the dough into a flat disc, wrap in plastic wrap, and refrigerate for about 30 minutes.
Baking
  1. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.
  2. Cut out cookies using your favorite shapes and place them on a parchment-lined baking sheet.
  3. Bake in the preheated oven for 18-20 minutes, or until set and just starting to turn light golden.
  4. Allow to cool completely on a wire rack.
