Preparation
- Heat your oil or butter in a large pan over medium heat.
- Sauté the onions until they become translucent, about 2-3 minutes.
- Add minced garlic and sauté for an additional minute.
- Stir in the frozen mixed vegetables and cook until they’re bright and tender, about 5 minutes.
- Add shrimp and lobster, stirring for a minute to combine flavors.
- Pour in chicken or seafood broth and heavy cream, stirring together and allowing the mixture to thicken, simmering for about 5-7 minutes.
- Sprinkle in Old Bay seasoning, and season with salt and pepper to taste.
Biscuit Topping
- In a mixing bowl, combine baking mix, cheddar cheese, milk, garlic powder, and dried parsley. Mix until just combined.
Assembly
- Transfer the seafood mixture to a greased baking dish.
- Pour the biscuit mixture on top evenly to cover the seafood filling.
- Drizzle melted butter over the biscuit topping.
- Bake in a preheated oven at 400°F for 20-25 minutes or until biscuits are golden brown.
