Ingredients
  

For the pot pie filling
  • 1 cup shrimp, peeled and deveined Use fresh or frozen, thawed shrimp.
  • 1 cup lobster meat, cooked and diced Can substitute with crab if desired.
  • 1 cup frozen mixed vegetables (peas, carrots, corn) No need to thaw before adding.
  • 2 cups chicken or seafood broth
  • 1 cup heavy cream Can substitute with coconut milk for a lighter option.
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon Old Bay seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil or butter For sautéing.
For the Cheddar Bay biscuit topping
  • 2 cups baking mix (like Bisquick)
  • 1 cup shredded Cheddar cheese
  • 3/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/4 cup butter, melted For drizzling on biscuit topping.

Method
 

Preparation
  1. Heat your oil or butter in a large pan over medium heat.
  2. Sauté the onions until they become translucent, about 2-3 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in the frozen mixed vegetables and cook until they’re bright and tender, about 5 minutes.
  5. Add shrimp and lobster, stirring for a minute to combine flavors.
  6. Pour in chicken or seafood broth and heavy cream, stirring together and allowing the mixture to thicken, simmering for about 5-7 minutes.
  7. Sprinkle in Old Bay seasoning, and season with salt and pepper to taste.
Biscuit Topping
  1. In a mixing bowl, combine baking mix, cheddar cheese, milk, garlic powder, and dried parsley. Mix until just combined.
Assembly
  1. Transfer the seafood mixture to a greased baking dish.
  2. Pour the biscuit mixture on top evenly to cover the seafood filling.
  3. Drizzle melted butter over the biscuit topping.
  4. Bake in a preheated oven at 400°F for 20-25 minutes or until biscuits are golden brown.
