Ingredients
  

For the shrimp
  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
For the mango salsa
  • 1 each ripe mango, diced
  • 1/2 each red onion, finely chopped
  • 1 each jalapeño, seeded and minced (optional for heat)
  • 1/4 cup fresh cilantro, chopped
  • 1 each Juice of lime
  • Salt, to taste
Optional for serving
  • Cooked rice
  • Avocado slices
  • Tortilla chips

Method
 

Preparation
  1. In a mixing bowl, combine the olive oil, chili powder, garlic powder, cumin, salt, and pepper. Toss in the shrimp, making sure they are well-coated. Let marinate for about 15-20 minutes.
  2. In another bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir until combined.
Cooking
  1. Heat a skillet over medium-high heat and add a splash of olive oil. Cook the shrimp for about 2-3 minutes per side until pink and opaque.
  2. Assemble your bowl starting with a base of cooked rice, then add grilled shrimp and top with mango salsa. Optionally add avocado slices or tortilla chips.

Notes
