  • 1/2 cup mayonnaise Can be substituted with coconut yogurt for a dairy-free version.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Add more for extra heat.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Garnishes
  • to taste Fresh chopped cilantro For garnish.
  • Optional lime wedges For serving.

Method
 

Preparation
  1. Season the chicken thighs on both sides with salt and black pepper.
  2. Heat a heavy skillet over medium-high heat and pour in the olive oil.
Cooking the Chicken
  1. Carefully add the chicken thighs to the skillet, ensuring not to crowd the pan.
  2. Cook undisturbed for about 6-7 minutes until they develop a golden sear.
  3. Flip the thighs over and lower the heat to medium, cooking for another 5 minutes or until the internal temperature reaches 165°F.
  4. Remove the chicken from the pan and let it rest for a few minutes.
Making the Sauce
  1. In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, and onion powder, and stir until smooth.
Finishing Touches
  1. Return the chicken to the skillet and drizzle the sauce over each thigh.
  2. Cook for an additional minute to warm the sauce.
  3. Garnish with cilantro before serving.
