  • 2 cups cherry tomatoes, halved (any color works!)
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil divided; 1 tablespoon for greasing the dish
  • 1 tablespoon balsamic vinegar optional for a tangy twist
  • Fresh basil or parsley, for garnish
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Method
 

Preparation
  1. Preheat your oven to 325°F (162°C).
  2. Prepare a baking dish by drizzling it with a tablespoon of olive oil.
  3. Nestle the salmon fillets in the prepared dish, skin-side down if using skin-on.
  4. Scatter the halved cherry tomatoes and minced garlic around the fish.
  5. Drizzle the remaining olive oil and balsamic vinegar over the salmon and tomatoes.
  6. Sprinkle with salt and pepper.
Cooking
  1. Bake in the oven for about 25-30 minutes.
  2. You’ll know it’s done when the salmon flakes easily with a fork and the tomatoes are soft but not mushy.
  3. Garnish with fresh herbs right before serving.
