- Heat the olive oil in a skillet over medium heat. Add the diced onion, garlic, and bell pepper, sautéing until they’re soft and fragrant; this should take about 5-7 minutes.
- Add the sliced andouille sausage to the skillet, letting it brown for a few minutes to bring out its smoky goodness.
- Transfer everything into a slow cooker. Add the black-eyed peas, broth, smoked paprika, thyme, bay leaf, and season with salt and pepper. Stir to ensure the peas are submerged in liquid.
Cooking
- Set your slow cooker on low and let it cook for 6-8 hours. Alternatively, for a quicker option, cook on high for about 3-4 hours.
- Once cooking time is up, remove the bay leaf, taste for seasoning, and add more salt or pepper if necessary.
- Serve the black-eyed peas over a generous scoop of rice.
