Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.25 cup granulated sugar
For the cheesecake filling
  • 8 ounces cream cheese, softened
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
For the topping
  • 1 cup mini marshmallows
  • 0.5 cup chocolate chips (semisweet or milk chocolate)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, leaving some overhang for easy removal later.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until it resembles wet sand. Press this mixture firmly into the bottom of the prepared dish to form the crust.
  3. Bake for about 10 minutes until slightly golden, then let it cool.
Filling
  1. Beat the softened cream cheese with granulated sugar and vanilla extract until smooth.
  2. Add in the egg and mix just until combined. Be careful not to overmix, or the cheesecake will crack.
  3. Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for 25 minutes or until the center is set but still slightly jiggly.
Topping
  1. Remove the cheesecake from the oven and sprinkle the mini marshmallows and chocolate chips on top.
  2. Return to the oven and bake for an additional 5 minutes, just until the marshmallows are puffy and starting to brown.
  3. Let the bars cool completely at room temperature, then refrigerate for at least 2 hours before slicing them.
  4. For added flavor, sprinkle a few graham cracker crumbs on top before serving.

Notes

These bars can be made a day or two in advance and stored in the fridge. You can use crushed cookies like Digestives or vanilla wafers as substitutes for the crust. They freeze well and should be wrapped tightly in plastic wrap and foil.
