Preparation
- Combine the flour, yeast, salt, and sugar in a large mixing bowl and stir until well mixed.
- Pour warm water into the mixture and combine using hands or a wooden spoon until a dough begins to form.

- Place the dough in a lightly oiled bowl, cover with a clean cloth, and let rise in a warm place for about 1 hour or until doubled in size.
Cooking
- Preheat your oven to 425°F (220°C).
- Punch down the risen dough and divide it into 8 equal pieces.
- Roll each piece into a rope about 24 inches long and twist into a classic pretzel shape.
- In a saucepan, bring about 10 cups of water to a boil and carefully add the baking soda.
- Boil each pretzel for about 30 seconds, then remove and place on a parchment-lined baking sheet.
- Whisk the egg and brush it over each pretzel before sprinkling coarse sea salt on top.
- Bake for 12-15 minutes, or until golden brown.
