Ingredients
  

Main Ingredients
  • 3 cups all-purpose flour Use bread flour for a chewier texture.
  • 1.5 cups active sourdough starter Make sure it’s bubbly.
  • 1.5 teaspoons salt
  • 1 tablespoon olive oil Optional for added flavor.
  • 1 cup water Adjust as needed for dough consistency.

Method
 

Preparation
  1. Combine sourdough starter and water in a mixing bowl until well blended.
  2. Add flour and salt; mix until combined, allowing it to look shaggy.
  3. Cover the dough with a damp kitchen towel and let it rest for 30 minutes (autolyse).
  4. If using, drizzle in olive oil and fold the dough over itself a few times.
Rising
  1. Let the dough rise for 2-3 hours at room temperature, stretching and folding every 30 minutes.
Shaping
  1. Turn the dough out onto a floured surface and divide into 10-12 portions.
  2. Lightly shape each piece into a roll.
  3. Let the rolls rise for another hour on a floured baking sheet.
Baking
  1. Preheat the oven to 450°F (230°C), placing a baking stone or inverted baking sheet inside.
  2. Transfer the rolls onto the hot surface and add ice cubes to create steam for a crusty texture.
  3. Bake for 20-25 minutes, until golden brown and sound hollow when tapped.
