Preparation
- Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin cups.
- In a large bowl, combine cornmeal, flour, baking powder, salt, and black pepper. Mix well.
- In another bowl, whisk together the milk, eggs, and vegetable oil.
- Add the wet mixture to the dry ingredients and stir until just combined; be careful not to overmix!
- Gently fold in the crumbled chorizo, chopped roasted poblanos, and shredded cheese.
Baking
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Let the muffin cups cool for a few minutes before carefully removing them from the tin.

These muffin cups can be frozen. Cool completely before freezing. Reheat in the microwave or oven as needed. For a vegetarian option, substitute chorizo with cooked black beans or diced mushrooms.
