Ingredients
  

Noodles
  • 8 oz 8 oz of your choice (rice noodles, spaghetti, or linguine)
Sauce Ingredients
  • 1/2 cup Peanut Butter (smooth or chunky) Chunky adds texture.
  • 1/4 cup Soy Sauce Tamari for gluten-free option.
  • 2 tablespoons Chili Sauce Adjust based on heat tolerance.
  • 2 cloves Garlic, minced Or use 1 tsp garlic powder.
  • 2 tablespoons Lime Juice Freshly squeezed is best.
  • 1 tablespoon Honey or Maple Syrup For touch of sweetness.
  • 1 tablespoon Vegetable Oil For sautéing.
Garnishes
  • 2 Green Onions, chopped For garnish.
  • 1/4 cup Peanuts, crushed Optional, for crunch and decoration.
  • 1 handful Vegetables of your choice (like bell peppers, broccoli, or carrots)

Method
 

Cooking Noodles
  1. Bring a pot of salted water to a boil and toss in your noodles. Cook according to package instructions (around 8-10 minutes) until al dente.
Making the Sauce
  1. In a medium bowl, combine peanut butter, soy sauce, chili sauce, minced garlic, lime juice, and your chosen sweetener. Mix until smooth, adding water if necessary to achieve desired consistency.
Combining
  1. Once the noodles are cooked, drain them and return to the pot. Pour the peanut sauce over the noodles and toss until fully coated. Fold in any vegetables if using.
Serving
  1. Dish noodles into bowls and top with chopped green onions and crushed peanuts.

Notes
