  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped (or frozen, thawed and drained)
  • 1/2 cup feta cheese, crumbled Can be substituted with goat cheese.
  • 1/4 cup breadcrumbs (optional) For added crunch, can be omitted for a gluten-free option.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • as needed Toothpicks or kitchen twine For securing rolls.

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Pound each chicken breast down to an even thickness to ensure they cook evenly.
  3. In a bowl, mix together the chopped spinach, crumbled feta, minced garlic, salt, and pepper.
  4. Place a generous portion of the filling onto each chicken breast, spreading it evenly.
  5. Roll each chicken breast tightly from the filling side and secure the ends with toothpicks or kitchen twine.
Cooking
  1. Heat a tablespoon of olive oil in a skillet over medium heat.
  2. Add the chicken rolls to the skillet and brown them on all sides for about 5-7 minutes.
  3. Transfer the browned chicken rolls to a baking dish and bake for 20 minutes or until the internal temperature reaches 165°F.
