For the quiche
  • 1 whole pre-made pie crust (store-bought or homemade)
  • 1 cup fresh spinach, chopped (can substitute with frozen spinach, drained)
  • 1 cup feta cheese, crumbled (can substitute with goat cheese)
  • 4 large eggs
  • 1 cup milk (can use almond or oat milk for dairy-free option)
  • Salt and pepper to taste
  • 1/2 cup onion, finely chopped (optional)
  • 1 teaspoon garlic, minced (optional)
  • Herbs like dill or thyme (for an aromatic touch)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made crust into your pie plate and prick the bottom with a fork to avoid bubbling. Chill in the fridge while preparing the filling.
  3. In a skillet over medium heat, sauté the chopped onion and garlic until translucent and fragrant.
  4. Add the chopped spinach and stir until wilted, then season with salt and pepper. Allow to cool slightly.
Mixing and Baking
  1. In a mixing bowl, crack in the eggs and whisk them together. Pour in the milk and season with a pinch of salt and pepper.
  2. Stir in the sautéed spinach and onion mixture along with the crumbled feta, gently folding everything together until well blended.
  3. Pour the mixture into the prepared pie crust and spread it evenly.
  4. Bake for about 35-40 minutes until the center is set and slightly golden on top, with a knife inserted in the middle coming out clean.
  5. Let cool for about 10 minutes before slicing.
