Ingredients
  

Vegetables
  • 1 bunch radishes, thinly sliced
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped (optional) for a milder flavor
  • 1/4 cup fresh parsley or dill, chopped
Cheese
  • 1/4 cup feta cheese, crumbled or vegan cheese for a dairy-free option
Dressing
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon honey or maple syrup (optional) for a touch of sweetness

Method
 

Preparation
  1. Wash the radishes and slice them thinly using a sharp knife or a mandoline for even cuts.
  2. Place the sliced radishes in a mixing bowl.
  3. Dice the cucumber into bite-sized pieces and add it to the bowl.
  4. Halve the cherry tomatoes and add them to the bowl.
  5. If desired, chop some red onion and add a little to the salad.
  6. Add the fresh herbs (parsley or dill) into the mixture.
  7. Sprinkle the crumbled feta cheese (or a vegan alternative) over the salad.
Dressing
  1. In a separate small bowl, whisk together the lemon juice, olive oil, salt, pepper, and honey or maple syrup (if using).
  2. Drizzle the dressing over the salad and toss gently until everything is nicely coated.
