  • 4 pieces chicken thighs (bone-in or boneless) Thighs are preferred for their juiciness.
  • 1 cup apricot preserves (or apricot jam) Can substitute with peach or mango jam.
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated (optional)
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa, for serving
  • Fresh parsley or cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the chicken thighs with a good sprinkle of salt and pepper.
  3. In a medium bowl, combine apricot preserves, soy sauce, Dijon mustard, minced garlic, and grated ginger (if using). Mix until smooth.
Cooking
  1. In a large ovenproof skillet over medium heat, add a splash of oil. Once hot, place the chicken thighs skin-side down and sear for about 5 minutes until browned.
  2. Flip the chicken over and pour the apricot glaze over the top, coating each piece evenly.
  3. Place the skillet in the preheated oven and bake for around 20-25 minutes until the chicken is cooked through and the glaze is bubbling.
  4. Let the chicken rest for a few minutes before serving.

Notes
