  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar Adjust based on sweetness preference
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pinch salt

Preparation
  1. In the slow cooker, toss the strawberries, granulated sugar, lemon juice, and a pinch of salt. Mix gently to combine.
  2. Cover with the lid and set on low for about 4 hours, until strawberries are soft and syrupy.
  3. Transfer the mixture to a mixing bowl and beat in the softened unsalted butter until fully combined and creamy.
  4. Add the vanilla extract and mix well.
  5. Taste and adjust the sweetness or add more lemon juice if needed.
  6. Return the mixture to the slow cooker for another 30 minutes to deepen the flavors.
  7. Allow to cool before transferring the strawberry butter into jars.
