Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.25 cup 1/4 cup granulated sugar
  • 0.5 cup 1/2 cup unsalted butter, melted
For the filling
  • 16 oz 16 oz cream cheese, softened
  • 0.5 cup 1/2 cup granulated sugar
  • 1 tsp 1 tsp vanilla extract
  • 2 large 2 large eggs
  • 1 cup 1 cup strawberry puree (fresh or frozen)
To garnish
  • Fresh strawberries, sliced Optional

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until they resemble wet sand.
  3. Press this mixture firmly into the bottom of a greased 9x9-inch baking pan to form the crust.
  4. Bake for 10 minutes, then let it cool slightly.
Filling
  1. In a separate bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Gradually add the sugar and continue to mix until fully combined.
  3. Mix in the vanilla extract, followed by the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  4. Fold in the strawberry puree for that vibrant flavor.
Baking
  1. Pour the cheesecake filling over the cooled crust, spreading it evenly.
  2. Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center still has a slight jiggle.
  3. Allow them to cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing.
