Preparation
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until they resemble wet sand.
- Press this mixture firmly into the bottom of a greased 9x9-inch baking pan to form the crust.
- Bake for 10 minutes, then let it cool slightly.
Filling
- In a separate bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the sugar and continue to mix until fully combined.
- Mix in the vanilla extract, followed by the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Fold in the strawberry puree for that vibrant flavor.
Baking
- Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center still has a slight jiggle.
- Allow them to cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing.

Notes
These bars are best served chilled and can be garnished with fresh strawberry slices and whipped cream. For variations, try using other berries or a drizzle of chocolate sauce.
