Ingredients
  

For the cake
  • 1.75 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk (or almond milk for a dairy-free option)
  • 0.5 cups vegetable oil (or melted coconut oil)
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the frosting
  • 1 cup heavy cream (or coconut cream for a vegan alternative)
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract
For the topping
  • to taste Fresh strawberries, hulled and halved
  • optional Whipped cream for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well incorporated.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the bowl, mixing well until smooth.
  4. Carefully stir in the boiling water until the batter is thin.
  5. Pour the batter evenly into the prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Frosting Preparation
  1. In a small saucepan, combine the heavy cream and chopped chocolate over low heat, stirring until melted and smooth.
  2. Remove from heat and stir in the vanilla extract. Allow it to cool to room temperature.
Assembly
  1. Once cooled, slice each cake layer in half, creating four layers in total.
  2. Spread frosting between each layer and stack them. Cover the top and sides with the remaining frosting.
  3. Garnish with halved strawberries and serve with optional whipped cream.

Notes
