  • 1 loaf brioche or challah bread (about 16 ounces)
  • 8 ounces cream cheese, softened (can use flavored varieties)
  • 1/2 cup strawberries, sliced (fresh or frozen, thawed)
  • 6 large eggs
  • 1 1/2 cups milk (whole, almond, or oat milk for a dairy-free option)
  • 1/4 cup sugar (or a sugar substitute)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • Butter (for greasing the dish)
  • Maple syrup (for serving)

Method
 

Preparation
  1. Grease a 9x13 inch casserole dish with a bit of butter.
  2. Slice your brioche or challah into cubes, about one inch in size, and layer half of these cubes in the prepared dish.
  3. Take your softened cream cheese and cut it into chunks or dollops over the bread. Scatter the sliced strawberries on top.
  4. Layer the remaining bread cubes over the strawberries and cream cheese.
  5. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and a pinch of salt. Pour this evenly over the layered bread.
  6. Gently press down on the top layer with a spatula to help the bread soak up the custard.
  7. Cover the dish with foil and refrigerate for at least 2 hours, or overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Remove the casserole from the fridge and let it sit for about 15 minutes.
  3. Bake, covered, for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes until golden brown.
  4. Let it cool slightly before serving.
  5. Cut into squares and plate with a drizzle of maple syrup.
