Preparation
- Grease a 9x13 inch casserole dish with a bit of butter.
- Slice your brioche or challah into cubes, about one inch in size, and layer half of these cubes in the prepared dish.
- Take your softened cream cheese and cut it into chunks or dollops over the bread. Scatter the sliced strawberries on top.
- Layer the remaining bread cubes over the strawberries and cream cheese.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and a pinch of salt. Pour this evenly over the layered bread.
- Gently press down on the top layer with a spatula to help the bread soak up the custard.
- Cover the dish with foil and refrigerate for at least 2 hours, or overnight.
Baking
- Preheat your oven to 350°F (175°C).
- Remove the casserole from the fridge and let it sit for about 15 minutes.
- Bake, covered, for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes until golden brown.
- Let it cool slightly before serving.
- Cut into squares and plate with a drizzle of maple syrup.
