- In another bowl, mix strawberry shortcake crumbs with melted butter and sugar until evenly coated.
Assembly
- Using a silicone mini muffin tray or mini cupcake liners, spoon a layer of the cheesecake filling into each mold, filling about halfway.
- Sprinkle a generous layer of the strawberry crunch topping on top and press down gently.
- Freeze for at least 2 hours until solid.
- Once frozen, carefully remove from the molds and garnish with fresh strawberries before serving.
