Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese, softened Can substitute with vegan cream cheese.
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping (like Cool Whip) Can substitute with dairy-free whipped topping.
For the Crunch Topping
  • 1 ½ cups strawberry shortcake crumbs Store-bought or homemade.
  • ¼ cup melted butter
  • 2 tbsp granulated sugar
  • to taste Fresh strawberries for garnish Optional

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, blend until smooth and creamy.
  2. Gently fold in the whipped topping until well combined and fluffy. Set aside.
  3. In another bowl, mix strawberry shortcake crumbs with melted butter and sugar until evenly coated.
Assembly
  1. Using a silicone mini muffin tray or mini cupcake liners, spoon a layer of the cheesecake filling into each mold, filling about halfway.
  2. Sprinkle a generous layer of the strawberry crunch topping on top and press down gently.
  3. Freeze for at least 2 hours until solid.
  4. Once frozen, carefully remove from the molds and garnish with fresh strawberries before serving.
