  • 1 cup granulated sugar
  • 1 large egg Can be replaced with a flax egg for a vegan option.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1/2 cup strawberries, pureed Frozen strawberries can be used; thaw and drain before pureeing.
  • Powdered sugar (for dusting)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy and light, about 3-5 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, combine the flour, baking powder, salt, and lemon zest; whisk them together.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently.
  6. Fold in the strawberry puree.
Baking
  1. Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
  3. Allow to cool; they will firm up as they cool.
