Strawberry Puff Pastry Danishes

Ingredients
  

For the strawberry filling
  • 1 cup fresh strawberries, hulled and sliced Feel free to substitute with your favorite berries
  • 2 tablespoons sugar Adjust based on berry sweetness
  • 1 tablespoon cornstarch For thickening
  • 1 teaspoon vanilla extract A hint of warmth
  • 1 tablespoon lemon juice To brighten the flavor
For the pastry
  • 1 sheet puff pastry Thawed if frozen; store-bought makes it quick
  • 1 egg beaten For egg wash
  • Powdered sugar For dusting, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, toss sliced strawberries with sugar, cornstarch, vanilla, and lemon juice. Let mixture sit for a few minutes.
  3. Roll out thawed puff pastry sheet on a lightly floured surface to about 10x10 inches. Cut into four squares.
  4. Score a smaller square about half an inch in from the edges of each pastry square to form a border.
  5. Scoop a generous tablespoon of strawberry mixture into the center of each square.
Baking
  1. Brush edges of each Danish with beaten egg.
  2. Fold the corners of the pastry over the filling, not worrying if they don’t fully meet.
  3. Place Danishes on the prepared baking sheet and bake for about 15-20 minutes or until golden brown.
  4. Let cool and dust with powdered sugar before serving.
