Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9x13-inch pans or line them with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat together the softened butter and sugar until pale and fluffy. Gradually blend in the buttermilk, eggs, vanilla, and almond extract.
- Gently fold the dry ingredients into the wet mixture. Pour the batter into your prepared pans.
- Bake for about 25–30 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely.
Strawberry Filling
- In a large bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for about 30 minutes to macerate.
Whipped Cream
- In a chilled bowl, whip the heavy cream, gradually adding the powdered sugar, vanilla, and almond extract until soft peaks form.
Assembly
- Place one layer of cake on a large serving platter, spread a generous layer of whipped cream over the top, and spoon on the strawberries.
- Add the second layer of cake and repeat the process. Top with any remaining whipped cream and strawberries.
