Ingredients
  

For the Cheesecake Layer
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy cream
For the Shortcake Layer
  • 1 pre-made shortcake or sponge cake
  • 1 cup heavy whipping cream (for topping)
  • 2 tbsp powdered sugar (for whipped cream)
  • 1 tsp vanilla extract (for whipped cream)
For the Strawberry Topping
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 splash lemon juice or balsamic reduction (optional) for added flavor

Method
 

Prepare the Cheesecake Base
  1. Preheat your oven to 325°F (160°C). In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add in sugar and vanilla, mixing well.
Incorporate the Eggs
  1. Add the eggs one by one, mixing thoroughly after each addition until combined.
Add Sour Cream and Heavy Cream
  1. Blend in the sour cream until incorporated, then slowly pour in the heavy cream until you achieve a creamy consistency.
Bake the Cheesecake
  1. Pour the cheesecake batter into a lightly greased springform pan and bake for about 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  2. Let it cool completely at room temperature before chilling in the fridge for at least 4 hours.
Prepare the Strawberries
  1. In a mixing bowl, combine sliced strawberries and sugar, letting them sit for about 30 minutes to develop their juices.
Whip the Cream
  1. In a clean bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Assemble Your Delight
  1. Once the cheesecake has set, layer the pre-made shortcake on top, spread on whipped cream, and spoon the juicy strawberries along with their syrup on top.
Final Touches
