Ingredients
  

For the Jello Layers
  • 1 box strawberry Jello (3 oz)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 box mixed berry Jello (3 oz)
  • 1 cup boiling water
  • 1 cup cold water
For the Cream Cheese Layer
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 container whipped topping (8 oz)
For Assembly
  • 2 cups mixed fresh berries (such as strawberries, raspberries, and blueberries)
  • 1 container extra whipped topping for garnish (optional)

Method
 

Preparation
  1. Dissolve each Jello flavor separately by mixing the gelatin powder with a cup of boiling water until fully melted. Stir in a cup of cold water for both the strawberry and mixed berry Jello, allowing each mixture to cool slightly.
  2. In a bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  3. Fold in the whipped topping gently to maintain its light, airy texture.
Assembly
  1. In a rectangular glass dish, pour in half of the strawberry Jello mixture and allow it to set in the fridge for about 30 minutes or until firm.
  2. Once set, spread half of the cream cheese layer on top, followed by a layer of fresh berries.
  3. Repeat the process by adding the remaining strawberry Jello, letting it chill once more before layering with the mixed berry Jello.
  4. Once that sets, finish with the last cream cheese layer and additional berries on top for a beautiful presentation.
