Preparation
- Rinse the cranberries under cold water, discarding any that are soft or spoiled.
- In a medium saucepan, combine the cranberries, sugar, and fresh orange juice.
- Bring to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
- Once boiling, reduce heat to a simmer.
Cooking
- Allow cranberries to heat until they begin to pop and release their tart juices (about 10–15 minutes).
- Stir in the orange zest, cinnamon, and cloves during the last few minutes of cooking.
- Test the consistency by drizzling a spoonful on a chilled plate; it should resemble a jam.
- Remove from heat and let cool slightly before transferring to sterilized jars.
