  • 1 cup mashed sweet potato (about 1 medium sweet potato) You can use canned sweet potato puree for convenience.
  • 1 cup all-purpose flour (or a gluten-free blend) Substitute with almond flour or oat flour for different flavors.
  • ½ cup unsweetened cocoa powder
  • ½ cup brown sugar (or coconut sugar for a healthier option)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs Can be substituted with flax eggs for a vegan option.
  • ½ cup almond milk (or any milk of your choice) Use plant-based milk for a vegan option.
  • 1 teaspoon vanilla extract
  • optional Chopped nuts or chocolate chips For added texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large mixing bowl, combine flour, cocoa powder, brown sugar, baking soda, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together the mashed sweet potato, eggs, almond milk, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined, being careful not to overmix.
  5. Fold in chopped nuts or chocolate chips if desired.
  6. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
Baking
  1. Bake for approximately 10-12 minutes or until a toothpick comes out clean.
  2. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack.
