Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine grated sweet potatoes, shredded mozzarella, eggs, salt, and pepper. Mix until well combined.
- Lightly grease a pie dish with cooking spray or olive oil. Press the sweet potato mixture evenly across the bottom and up the sides of the dish.
- Bake the crust in the oven for about 20 minutes until it starts to soften and lightly browns.
Filling Preparation
- In another bowl, whisk together the eggs and milk until combined. Stir in chopped spinach, crumbled goat cheese, nutmeg, salt, and pepper.
- After 20 minutes, remove the crust from the oven and pour the spinach and cheese mixture over the top, spreading it evenly.
Baking
- Return the quiche to the oven for another 25 to 30 minutes until the filling is set with a slight jiggle in the middle.
- Allow the quiche to cool for a few minutes before slicing.

Notes
Feel free to mix and match the greens; arugula or Swiss chard can be excellent substitutes for spinach. You can add cooked bacon or sautéed mushrooms for more protein, and for a vegan version, use flax eggs and non-dairy milk with a plant-based cheese. The sweet potato crust can be prepared in advance and stored in the fridge.
