  • 1 can (15 oz) black beans, drained and rinsed Canned beans save time, but you can use cooked dry beans as well.
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained Frozen corn can be used as a substitute.
  • 1 can (14.5 oz) diced tomatoes Use tomatoes with green chiles for added heat.
  • 1 packet taco seasoning Use store-bought or homemade.
  • 4 cups beef or vegetable broth Vegetable broth is a good option for a vegetarian soup.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small bell pepper, diced Any color bell pepper can be used.
  • 1 Juice of 1 lime (optional, but highly recommended) Adds a fresh, zesty flavor.
  • Salt and pepper, to taste
  • Tortilla chips, cheese, sour cream, diced avocado, and cilantro for serving (optional) These are optional toppings to customize servings.

  1. Begin by browning the ground meat in a large pot over medium heat for about 5-7 minutes, breaking it up as it cooks.
  2. Drain any excess fat to keep the soup light and healthy.
  3. Add the diced onion, garlic, and bell pepper to the pot and stir until softened, about 3-4 minutes.
  4. Combine the black beans, kidney beans, corn, diced tomatoes, and taco seasoning in the pot.
  5. Pour in the broth, stir well, and bring the mixture to a gentle boil.
  6. Reduce the heat and let it simmer for about 10-15 minutes to meld the flavors together.
  7. Just before serving, add the lime juice and season with salt and pepper to taste.
