Ingredients

Dry Ingredients
  • 2 cups all-purpose flour (can substitute with whole wheat flour for a heartier muffin)
  • 1 cup granulated sugar (or coconut sugar for a lighter touch)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for that warm flavor)
  • 1/2 teaspoon nutmeg (optional, but adds a lovely depth)
Wet Ingredients
  • 1 cup grated apple (about 2 medium apples; Granny Smith or Honeycrisp work well)
  • 1/2 cup diced apple (for extra chunks in each bite)
  • 1/2 cup unsweetened applesauce (this adds moisture)
  • 1/2 cup vegetable oil (or melted coconut oil for a healthier twist)
  • 2 large eggs (room temperature for smoother mixing)
  • 1 teaspoon vanilla extract (homemade if you can!)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). As you wait, your kitchen will start to fill with the comforting aroma of warm spices. Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Make sure everything is evenly blended.
Mixing
  1. In another bowl, combine the grated apple, diced apple, applesauce, oil, eggs, and vanilla extract. Whisk these wet ingredients together until just mixed.
  2. Pour the wet mixture into the dry bowl. Gently stir just until the flour is incorporated—don’t overmix!
Baking
  1. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for about 18-22 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean or with a few crumbs attached.
Cooling
  1. Cool them in the tin for a few minutes, then transfer to a wire rack to cool completely.
