Preparation
- Start by chopping your chicken into even bites. Season with a pinch of salt and pepper.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside.
Cooking
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken to the hot pan in a single layer and sear undisturbed for about 2-3 minutes, then stir and cook for another 3-4 minutes until golden brown and cooked through.
- Toss in the bell pepper, carrot, and snap peas. Stir-fry for about 3-4 minutes.
- Pour in your homemade teriyaki sauce and stir everything together. If using cornstarch for thickening, add it now and cook for an additional minute.
- Sprinkle the green onions on top and give it one last stir before serving.

For a gluten-free version, substitute soy sauce with tamari. For storage, keep in an airtight container and it will last up to 3 days. You can prep the chicken and veggies ahead of time.
