  • 1 piece bell pepper (red or yellow), sliced Choose based on color preference.
  • 1 piece carrot, julienned or grated
  • 2-3 tablespoons fresh cilantro, chopped Basil can be a different twist.
  • 1-2 teaspoons red chili flakes Adjust based on your heat preference.
Dressing Ingredients
  • 3 tablespoons rice vinegar Lime juice can be used as a zesty alternative.
  • 2 tablespoons sugar Honey can be used for a natural sweetness.
  • 1 tablespoon soy sauce Tamari can be used for a gluten-free option.
  • 1 tablespoon sesame oil (optional) Adds richness to the salad.

Method
 

Preparation
  1. Wash and slice the cucumbers thinly, using a mandoline for consistent slices.
  2. Place cucumber slices in a bowl, sprinkle a pinch of salt, and let them sit for about 10 minutes to draw out excess moisture.
  3. Slice the bell pepper into strips and julienne or grate the carrot.
  4. Add the bell pepper and carrot to the bowl with the cucumbers, tossing them gently.
Making the Dressing
  1. In a separate bowl, whisk together the rice vinegar, sugar, soy sauce, and chili flakes.
  2. Taste the dressing and adjust according to your preferences. Add sesame oil if desired.
Combining
  1. Pour the dressing over the vegetables and stir until well combined.
  2. Gently fold in the chopped cilantro.
  3. Let the salad sit for about 15 minutes before serving to allow the flavors to meld.
