Ingredients
  

Main Ingredients
  • 2 pieces Chicken breast or thigh, sliced thinly (substitute with tofu for a vegetarian option) For a vegetarian option, use tofu.
  • 8 ounces Rice noodles (can use whole wheat or egg noodles) Prepare according to package instructions.
  • 1 Red bell pepper, thinly sliced
  • 1 Zucchini, spiralized or sliced
  • 1 large Carrot, shredded
Sauce Ingredients
  • 1/2 cup Peanut butter (use creamy or crunchy based on preference)
  • 1/4 cup Soy sauce (tamari for gluten-free)
  • 2 tablespoons Honey or maple syrup For sweetness.
  • 3 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 lime Lime juice (from 1 lime, plus extra for serving)
Garnishes
  • Cilantro (for garnishing)
  • Peanuts, chopped (for topping)
  • 2 tablespoons Sesame oil (for cooking)
  • Red pepper flakes (optional, for heat)

Method
 

Preparation
  1. Prepare the rice noodles according to the package instructions. Set aside.
  2. Heat a large skillet over medium-high heat and drizzle in the sesame oil.
  3. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
  4. Once the chicken is done, push it to the side of the pan and add the minced garlic and grated ginger, sautéing for about 30 seconds.
Cooking
  1. Add the sliced bell pepper, zucchini, and shredded carrots to the pan, stirring and cooking for another 5 minutes until the veggies are tender.
  2. In a bowl, mix the peanut butter, soy sauce, honey or maple syrup, and lime juice until creamy.
  3. Pour the sauce mixture over the chicken and vegetables, letting it warm through for a minute or two.
  4. Add the soaked noodles to the skillet and toss everything gently to coat the noodles in the sauce.
Serving
  1. Serve warm, garnished with fresh cilantro, chopped peanuts, and an extra squeeze of lime.
