Preparation
- Prepare the rice noodles according to the package instructions. Set aside.
- Heat a large skillet over medium-high heat and drizzle in the sesame oil.
- Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
- Once the chicken is done, push it to the side of the pan and add the minced garlic and grated ginger, sautéing for about 30 seconds.
Cooking
- Add the sliced bell pepper, zucchini, and shredded carrots to the pan, stirring and cooking for another 5 minutes until the veggies are tender.
- In a bowl, mix the peanut butter, soy sauce, honey or maple syrup, and lime juice until creamy.
- Pour the sauce mixture over the chicken and vegetables, letting it warm through for a minute or two.
- Add the soaked noodles to the skillet and toss everything gently to coat the noodles in the sauce.
Serving
- Serve warm, garnished with fresh cilantro, chopped peanuts, and an extra squeeze of lime.
