Vegetables
  • 1 bell pepper 1 bell pepper, sliced (red or yellow for a pop of color)
  • 1 cup 1 cup broccoli florets
  • 1 cup 1 cup snap peas (or green beans)
  • 1 medium 1 medium carrot, julienned
  • 3 cloves 3 cloves garlic, minced
  • 1 tablespoon 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • Fresh cilantro (optional, for garnish)
  • Sesame seeds (optional, for crunch and flavor)
Sauce
  • 3 tablespoons 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon 1 tablespoon oyster sauce (or a vegan alternative)
  • 1 teaspoon 1 teaspoon sugar (coconut sugar works beautifully)
  • 1 lime Juice of 1 lime (for that zesty kick)
Oil
  • 2 tablespoons 2 tablespoons vegetable oil (or any neutral oil)

Method
 

Preparation
  1. Start by washing and cutting your vegetables into bite-sized pieces.
  2. Make sure to keep everything ready because stir-frying moves quickly!
Cooking
  1. Place a large wok or skillet over medium-high heat. Drizzle in the vegetable oil once it's hot.
  2. Toss in the minced garlic and ginger, stirring for about 30 seconds until they become aromatic.
  3. Add the carrots and broccoli; stir-fry for about 2-3 minutes to soften slightly.
  4. Then add the bell peppers and snap peas, cooking for another 2-3 minutes until all veggies are tender-crisp.
  5. In a small bowl, mix the soy sauce, oyster sauce, and sugar. Pour this sauce over the veggies and toss to coat evenly.
  6. Squeeze lime juice directly over the stir-fry and toss everything together for about 1 minute to allow flavors to meld.
  7. Transfer your colorful stir-fry to a serving dish, garnishing with cilantro and sesame seeds if desired.
