  • 1 cup carrots, grated or julienned
  • 1 cup red bell pepper, sliced thin
  • 1/2 cup green onions, chopped
  • 1/2 cup fresh cilantro, chopped Omit if fresh herbs aren’t preferred.
  • 1/2 cup mayonnaise Can use Greek yogurt for a healthier alternative.
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup Use maple syrup for a vegan option.
  • Salt and pepper, to taste
  • 1/4 cup chopped nuts (like almonds or walnuts) Optional, for added crunch.

Method
 

Preparation
  1. In a large mixing bowl, add the shredded cabbage.
  2. Add the grated carrots and sliced bell pepper to the cabbage mixture.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  4. Pour the dressing over the cabbage mixture and gently fold until well coated.
  5. Let the slaw sit in the fridge for at least 30 minutes before serving to meld flavors.
