  • 1/2 cup granulated sugar
  • 1 large egg or use a flax egg for a vegan option
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Butterfinger bars, chopped (about 3-4 bars)
  • sea salt for sprinkling (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Stir until well blended and creamy.
  3. Incorporate the egg and vanilla extract, mixing until smooth.
  4. Add the baking soda and salt, blending them into the mixture.
  5. Fold in the chopped Butterfinger bars until evenly distributed.
Baking
  1. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.
  2. If desired, sprinkle a pinch of sea salt on top.
  3. Bake for 10-12 minutes, or until the edges are golden brown.
  4. Let the cookies rest on the sheet for a few minutes before transferring them to a wire rack to cool completely.
