Base Ingredients
  • 1 cup cold brew coffee store-bought or homemade
  • 1 cup mascarpone cheese
  • 1 cup heavy cream or coconut cream for a dairy-free option
  • 1/2 cup granulated sugar you can adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon cocoa powder plus extra for dusting
  • 12-15 pieces ladyfinger cookies depending on the dish size
  • Optional: coffee liqueur for a grown-up twist or chocolate shavings for garnish

Method
 

Preparation
  1. Start by pouring your heavy cream into a mixing bowl. Beat it with an electric mixer until soft peaks form.
  2. Just when it starts to fluff up, add the granulated sugar and vanilla extract. Continue mixing until you reach firm peaks.
  3. In another bowl, gently fold the mascarpone cheese with a spatula until creamy but not overmixed.
  4. Slowly fold the whipped cream into the mascarpone, maintaining the light texture. If using coffee liqueur, mix it in now.
Layering
  1. Dip the ladyfinger cookies briefly into cold brew coffee and lay them in the bottom of your dish.
  2. Add a layer of the mascarpone mixture on top. Repeat with another layer of dipped ladyfingers and finish with more mascarpone.
Chill
  1. Pop your creation in the fridge for at least 2 hours to let the flavors meld.
Serve
  1. Dust the top with cocoa powder and add chocolate shavings if desired before serving.

Notes
