Preparation
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, combine the granulated sugar, brown sugar, melted butter, and egg (or flax egg). Mix until smooth and creamy.
- Add the espresso and vanilla to the wet mixture, stirring until well combined.
- Slowly add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix; it's okay if the batter is lumpy.
- Cover the dough with plastic wrap and chill in the fridge for about 30 minutes.
Baking
- Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball generously in powdered sugar.
- Place the dough balls on a baking sheet lined with parchment paper, giving them space to puff up.
- Bake for 10-12 minutes until the edges are firm but the centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
