  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup melted butter (or coconut oil for a vegan swap)
  • 1 large egg (or flax egg for a vegan option) Use 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water as a substitute.
  • 2 tablespoons strong brewed espresso (or coffee)
  • 1 teaspoon vanilla extract
For Dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. In another bowl, combine the granulated sugar, brown sugar, melted butter, and egg (or flax egg). Mix until smooth and creamy.
  4. Add the espresso and vanilla to the wet mixture, stirring until well combined.
  5. Slowly add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix; it's okay if the batter is lumpy.
  6. Cover the dough with plastic wrap and chill in the fridge for about 30 minutes.
Baking
  1. Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball generously in powdered sugar.
  2. Place the dough balls on a baking sheet lined with parchment paper, giving them space to puff up.
  3. Bake for 10-12 minutes until the edges are firm but the centers remain soft.
  4. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
