Ingredients
  

For the Salad
  • 12 oz cheese tortellini (fresh or frozen)
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • ½ cup grated Parmesan cheese divided
  • ½ cup croutons (store-bought or homemade) for garnish
  • to taste fresh basil optional, for garnish
For the Dressing
  • cup Caesar dressing (homemade or store-bought)
  • 1 unit juice of 1 lemon
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the tortellini according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine chopped romaine, halved cherry tomatoes, and half of the grated Parmesan.
Mixing
  1. Add the drained tortellini to the bowl and gently fold to combine.
  2. Drizzle the Caesar dressing and lemon juice over the mixture, then season with salt and pepper. Toss until everything is coated.
Serving
  1. Before serving, sprinkle remaining Parmesan and croutons on top. Add fresh basil if desired.

Notes

For a twist, try spinach or kale instead of romaine. Use vegan tortellini and dressing for a plant-based version. The salad is best enjoyed fresh but can last in the fridge for 2-3 days if stored properly. Keep croutons separate until serving.
