Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream (or Greek yogurt for a twist)
Main Ingredients
  • 2 cups fresh blueberries (or frozen, if necessary) Toss in flour before adding if using frozen
  • Powdered sugar for dusting (optional) For serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour your bundt pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Incorporate the eggs one at a time, blending well after each addition and scraping down the sides of the bowl.
  5. Pour in the vanilla extract and blend into the mixture.
Mixing Ingredients
  1. Gradually add the flour mixture, alternating with the sour cream, starting and ending with the flour mixture.
  2. Gently fold in the blueberries with a spatula.
Baking
  1. Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 15 minutes before flipping onto a wire rack.
  3. Dust with powdered sugar, if desired, before serving.

Notes
