Ingredients
  

Pasta and Protein
  • 8 oz pasta (any short shape like rotini or penne) Substitute for gluten-free pasta if desired.
  • 1 can (5 oz) tuna, drained Feel free to use a flavored variety.
Vegetables
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ½ cup sweet corn (canned or frozen, thawed)
  • ¼ cup black olives, sliced (optional)
  • ¼ cup fresh parsley, chopped
Dressing
  • ¼ cup mayonnaise (or Greek yogurt) Use Greek yogurt for a lighter touch.
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and toss with a splash of olive oil.
  2. Prep the veggies by chopping the cherry tomatoes, cucumber, and red onion, and slicing the black olives if using. Chop fresh parsley.
Mixing
  1. In a large bowl, combine the pasta, tuna, chopped veggies, corn, and olives.
  2. In a smaller bowl, whisk together the mayonnaise, olive oil, lemon juice, salt, and pepper to create the dressing.
  3. Pour the dressing over the pasta mixture and toss to combine, ensuring everything is well-coated.
Serving
  1. Taste the salad and adjust the seasoning if necessary. Serve chilled or at room temperature.
